We had company over last night, and decided to serve up some more homemade candy bar creations. This time, we tried out a recipe for Almond Joys, that we found here, at the Chocolate Candy Mall.

We deviated a little from the recipe, in that we rolled the coconut filling into roundish bars, instead of pressing them down into a pan, before refrigerating.

And, we melted our chocolate in the microwave, instead of using a double boiler. This caused our chocolate shell to be a little thicker than I would have liked. I think I would recommend the double boiler method, so the chocolate could be kept hot, and runny, for pouring over the coconut.

They were pretty good though (our guests happily took some of the left overs home with them). Being fans of Mounds, and Almond Joy candy bars, this is a recipe we'll be keeping. Though be warned, these tasty little treats are even sweeter than the peanut butter cups we made last week. If you try them, have a large glass of milk, and a few dozen wet wipes, ready ahead of time.
It's great to be a homeschooler.
