Thanks to all the blogs, who have posted a peanut butter cup recipe in the last couple of weeks. I've been running in to them every time I turn around, and I just couldn't resist any longer!
I sort of did a pinch of this and a pinch of that - so I ended up with half again too much peanut butter mixture. But, for the 24 mini muffin pan, here's what we did.
Melt half a bag of chocolate chips - use it to fill the bottoms of the pan (I buttered the pan, but it did not turn out to be necessary). Allow to harden in the freezer, while you mix the peanut butter mixture.
Melt together 1 cup peanut butter, and 1 stick of butter. Add in 1 to 1 and 1/2 cups powdered sugar, and 1 cup graham cracker crumbs.
Drop about a tablespoon of peanut mixture into muffin cups.
Cover with about a bag and a half worth of melted chocolate chips.
Place back into the freezer until the chocolate hardens.
Slip a buter knife or spatula beside each cup, and pop them out of the pan.
Not quite Reeces - but just as good. Have an insulin shot ready though - they are sweet!
