Happy Apricot Day

These happy little, Fox and Owl inspired, fellows turn out to be fairly quick and easy to make.


Melt a cup, or two, of chocolate chips, in a microwave safe bowl, stirring after every 30 seconds, until the chocolate is completely melted.


Then, holding the top of each apricot, dip the bottom half into the chocolate, and place them on a tinfoil covered, cookie sheet. I placed the bag of apricots, and the cookie sheet, into the freezer, while I was melting the chocolate, to make them nice and cold, before dipping.

Pop the cookie sheet back into the freezer, while you melt 1/4 cup, or less, of white chocolate chips, and spoon them into a Ziploc-type, plastic bag. Snip a small (very small) corner off of the bottom of the bag, and pipe on buttons, bows, and eyes.

Then, place the cookie sheet back into the freezer, while you remelt a little of the semi-sweet chocolate, and spoon it into another plastic bag, to pipe on pupils, and mouths.


Place the cookie sheet into the freezer, one last time, for just a minute, to let all the chocolate set, before transferring the apricots to a plate, to serve. With all the in, and out of the freezer, it sounds like more work than it is. It only takes 10-15 minutes, to transform a bag of plain old apricots, into a very special treat.


And, they are surprisingly delicious. Happy Apricot Day!

  3. These are so cute, but I can just see in my house the chocolate might get licked off and the apricot would go in the garbage. There is no fooling Selena!

  4. So, do you save the chocolate you've melted and haven't used or do you throw it out?

    Because you're probably right it didn't take 1/4 cup of white chocolate, but that's so darn cute.

  5. Ticia - Generally, if I have extra melted chocolate, I dip whatever I have on hand into it to use it up...pretzels...fruit...cooies. But, this time the Man of the House was standing by to dispose of the extra :)
