Pumpkin Pie (Cake Mix) Cookies


Working with the delicious smelling fall finger paint all afternoon, left the children pleading for pumpkin pie. It's a bit early in the season to start pie making, in my opinion, but I found a pumpkin pie cookie recipe, here, that substituted nicely.

The recipe calls for mixing together:

  • 1 spice cake mix (we used a carrot cake mix, instead)

  • 1 teaspoon pumpkin pie spice

  • 1/3 cup canned pumpkin puree

  • 2 eggs

  • 2 tablespoons softened butter

  • 1/2 bag white chocolate chips (which we left out altogether)

The dough is quite sticky, and is supposed to be left to chill for 1/2 hour in the refrigerator, but life is much too short for that, so we skipped right ahead to dropping it by rounded teaspoon fulls, onto a greased cookie sheet, and baking for 14 minutes at 350 degrees Fahrenheit.


We ate them warm, topped with whipped cream - and yuuuummm!


They are quite rich, so one little cookie ought to be enough to satisfy even the most ardent pumpkin pie lover. Our only complaint is using just 1/3 of a cup of pumpkin, has left us with quite a bit of pumpkin puree to use up. What are we going to do with all that pumpkin?

After the pumpkin farmers on the hill, overlooking the town, toss out their surplus seeds, on a particularly windy day, the people of Pumpkin Town find themselves in quite a viny mess the following spring. And, although the five brothers from the farm, make it all right again, there's a twist at the end, sure to bring a smile, and making this a perfect book for spring planting time, or for the harvest in the fall.

It's great to be a homeschooler.

  1. Oooooo- that sounds perfect for a fall day...

    (Oh, and you probably know this, but I would just freeze the rest of the puree- I do that with my extra pumpkin, and it works just as well the second time!

  2. Wonder Mom - Great idea! I freeze my fresh pumpkin puree every year, but it hadn't occurred to me to freeze the left over canned stuff - but why not! It's better than letting it go bad in the fridge :)

  3. We are HUGE pumpkin pie fans in our house!!!!!!!!!!!!!!!! I made our first pie of the season last week! It's hard to wait. I will be making these cookies and I'm requesting that book now too.

  4. These look so yummy. I was thinking last night about what we would do with our pumpkin this year, last year we made pies, we might just have to try these too.

    Another thing you can do with canned pumpkin, mix it with cool whip, about equal parts, put it in cups and top off with a dab of cool whip and you have great pudding.

  5. I only wish any of the family was even remotely interested in eating anything pumpkin :) However, the book sounds like fun - I'll see if our library has it.
